15 BEVERAGE REFRIGERATOR

These are a variation on Marion's Buttermilk Soda Scones.


Makes 12 scones at 3 points each (2 points each without the icing)


Ingredients:
1 1/2 cup(s) all-purpose flour
1 1/2 cup(s) whole wheat flour
3 tbsp McNeil Nutritionals Splenda Brown Sugar Blend
1 tsp baking soda
1 tsp table salt
1 1/2 cup(s) buttermilk, 1/4c separated
1/2 cup(s) canned pumpkin
1/4 tsp vanilla extract
2 tsp pumpkin pie spice (I only used 1t and it definitely needed more)
1 cup(s) powdered sugar
1/4 tsp ground cinnamon


Preheat oven to 425 degrees F and place rack in center of oven. Line a baking sheet with parchment paper or silicone mat. Set aside.


In a large bowl, whisk together flour, sugar, baking soda, and salt. Make a well in the center of the flour mixture and add vanilla, 1 1/4c buttermilk, pumpkin, and pumpkin pie spice.
Mix dough with a spoon until you have a soft, moist dough.


Transfer to a lightly floured surface and gently knead the dough into a round that is about 1 inch thick. Cut this circle into 6 triangular sections, then cut each triangle in half (to make 2 smaller triangles).


Place the scones on the prepared baking sheet and brush the tops with a little extra buttermilk.
Bake for 10-15 minutes until nicely browned and a toothpick inserted in the center of a scone comes out clean. Test by tapping the bottom of a scone - it should sound hollow.


While making, make the icing:
mix 1c powdered sugar, 2T buttermilk, and 1/4t cinnamon until thick and smooth. Spoon into a small freezer bag, cut the corner, and squeeze on to tops of scones.

these are the freezer packs i use for UNDER my hammies' cages. i use the smallest size, it fits perfectly in the corner of a critter trail, it takes up about 1/4 of the space so they can pick their own spot. if they have a particular spot they like to lay, i just put it under them there. they actually know right where to lay to find the cool area when i put them under their cages now. so i can check to see if they need a new one in this heat wave. since it's jsut Astrid and Cocoa, i have 4 packs to the two cages. so while two packs are melting, two are re-freezing ^_^. they are cheep too. and they come in 3 sizes so far as i've seen. small medium and large. as you can see they are found at rite-aid stores. i keep them in freezer bags while in the freezer to make sure they dont get scratched or popped.
